Lunch Crush: Spicy Tuna Pita

My lunch lately? Spicy, creamy, crunchy, and honestly kind of showing off.

Fast, flavorful, and full of kick, this one’s got all the good stuff. Creamy tuna meets crisp cucumbers, pickled red onions (hope you have some left over from last week!), and a Sriracha drizzle, all tucked into a toasty pita. It’s satisfying, slightly spicy, and dangerously easy to devour.

What You’ll Need

1 pita (I used whole wheat pita that didn't have a pocket)
1 can solid white albacore tuna in water, drained
2–3 Tbsp light mayo
1 tsp mustard of choice
1 tsp Sriracha, plus more for drizzling
soy sauce to taste
black pepper
1 Tbsp green onion, green parts only, chopped
Pickled red onions (from last week!)
Cucumber, thinly sliced (Persian or English are best)
Sesame seeds

What You’ll Do

  1. In a bowl, mix together your drained tuna, mayo, mustard, Sriracha, green onion, drizzle of soy sauce and black pepper until it’s nice and creamy.

  2. Fold your pita in half (or cut in half if yours has a pocket!) and top with or stuff the tuna mixture inside, followed by a few slices of cucumber and some pickled red onions.

  3. Sprinkle with sesame seeds and finish with a drizzle of Sriracha.

  4. Devour and immediately make one for whoever else is home because they'll be standing over your shoulder asking you for one.

*P.S. You could skip the pita and serve the tuna mix over rice for a speedy spicy tuna bowl!
