Deviled Egg Toast

It’s creamy, it’s tangy, it’s protein-packed and punchy. It’s got pickled things and paprika. It’s what happens when a deviled egg and your favorite toast have a very delicious baby.

What You’ll Need
1 slice hearty bread (sourdough is preferred), toasted
Mustard of choice (I like Grey Poupon)
½ cup cottage cheese (Good Culture is my go-to)
1 hard-boiled egg, diced (this is a tried and true method)
Flaky salt + black pepper
Extra virgin olive oil, for drizzling
Paprika, just a dash
Pickled red onions (I like to make them this way)
Fresh chives
What You’ll Do
Spread a thin layer of mustard on your toast.
Spoon on your cottage cheese and spread it evenly.
Sprinkle on your diced egg.
Season with flaky salt, cracked pepper, and just the tiniest bit of paprika.
Drizzle lightly with olive oil. Top with a few pickled red onions and chives.
Eat immediately. No judgment if it doesn't make it to a plate.
Let me know if you try it; bonus points for a photo, I really love hearing from you.
And if you know someone who might like this recipe too, send it their way. You never know whose toast needs a zhuzh!
See ya next week,
