Sun-dried Tomato Feta Bread

There are two types of people in this world; those who walk into a coffee shop and order a coffee and a sweet pastry, and those who order a coffee and a savory pastry. (I guess there’s people who don’t order a pastry at all, but I’m not sure I want to know them.) Given the choice, I am hands down the savory chooser. Unless of course we’re just calling it a day and ordering one of everything. That’s who I really am, deep down. But anyway, if given a choice, savory all day.

This bread has everything; (said in SNL Stefan’s voice), it’s a sweet bread base with savory tomatoes and creamy feta and fragrant chives. It is to-die-for on its’ own, with a cup of coffee, or dare I say a glass of wine. The sweetness from the sugar in the dough is almost cornbread-like, so I can imagine it would be amazing alongside something with a little kick to it.

Anyway, if all of those options for it to be enjoyed don’t persuade you, then I guess you really are the “orders a coffee and a sweet pastry” person and well…fine. Just don’t tell me you’re the kind who doesn’t order a pastry at all.

What You'll Need

Makes 1 Loaf

Flour - 2 cups

Sugar - 1/2 cup

Baking powder - 1.5 teaspoons

Baking soda - 1/2 teaspoon

Kosher salt - 1 teaspoon

Buttermilk - 1 cup

Egg - 1

Salted butter - 1/2 stick, melted and slightly cooled

Crumbled Feta - 1/2 cup

Sun dried tomatoes in olive oil - 2 Tablespoons, roughly chopped

Fresh chives - 1 Tablespoon, chopped

What You'll Do

  1. Whisk together dry ingredients in a large bowl.

  2. Whisk together milk, eggs, and butter in a separate bowl, then add to dry.

  3. Gently fold in feta, tomatoes, and chives and mix until just combined.
    Be careful not to over mix!

  4. Pour batter into parchment lined loaf pan.

  5. Bake for 45-55 min at 350.
