The weather’s finally turning beautiful around here, and we’re getting some serious hints of summer. Between that and the recent wave of spring breaks, I’ve been feeling very ready for a tropical escape.

And if, like me, you do not in fact have an island vacation on the calendar, the least we can do is fake it: throw on your favorite sunnies, queue up something with a tropical beat (like this), pour yourself a sweet-tart, smoky, lightly fruity cocktail, and step out into the sun. We might still need a sweater - but not for much longer.
What You'll Need
2 oz mezcal
1 oz fresh lime juice
1 oz pineapple juice
Topo Chico (or another sparkling water), to top
Optional: Tajín or salt for rim, lime wedge or pineapple chunk for garnish
What You'll Do
Rim your glass with lime and dip in Tajín or salt.
Fill a tall glass with ice.
Add mezcal, lime juice, and pineapple juice. Stir to combine.
Top with Topo Chico.
Garnish with a lime wedge or a pineapple chunk if you’re feeling fancy!
