No Bake Peanut Butter Bites

I don’t know about you, but around 3 or 4pm I hit a wall. It’s just a tad too early to start getting excited about the evening (or the upcoming kids’ bedtime), but too late to be starting any major activities… yet there’s still time to kill. It’s a lull. And I need all the help I can get to get out of said lull.

I present to you these (adorable) low-effort, energy/antioxidant/fiber/omega-3 packed bites of chocolatey peanut butter goodness. Pair one of these with an iced coffee and praise the lawd… we can and will get through any afternoon.

What You'll Need

Makes about 27 Tablespoon sized bites

Old fashioned oats - 1 cup

Mini chocolate chips - 1/2 cup

Ground flaxseed - 1/2 cup

Ground chia seeds - 1/4 cup

Creamy peanut butter - 1/2 cup

Honey - 1/3 cup

Vanilla extract - 1 teaspoon

Kosher salt - 1/2 teaspoon

Rainbow non pareils - 1/3 cup

What You'll Do

  1. Mix all ingredients together in a mixing bowl and scoop into Tablespoon size balls. 

  2. Roll in sprinkles and freeze for an hour on a baking sheet before storing in the freezer in an airtight container.
