Coffee Shop Breakfast Sando

To me, this is the ultimate coffee shop sandwich. My husband and I lived in Southern California for 12 years and we spent many of our hours (and our dollars, seriously) at Vinaka, a “local’s only” vibe kind-of coffee shop. The kind of coffee shop you see in movies, complete with grumpy old men playing chess, over-caffeinated entrepreneurs tapping away on their laptops for hours, and approx. 24 employees all under the age of 25.

And to think their coffee wasn’t even what did it for me. It was their jalapeño cheese bagels, their house-made tuna salad, and their breakfast sandwiches…loaded high with whatever concoction you could imagine, on flaky, fresh croissants. Drool.

Enter my favorite combo: bacon, egg, feta, jalapeño, red onion, tomato, and avocado. I mean. You could put just about anything on a croissant and I would probably eat it, but this is perfection. And although we can’t just run into Vinaka anymore, (or sit there for hours) we still love to make these at home from time to time. Grab some fresh croissants from your favorite local bakery or grocery store and make your ultimate breakfast sando… it’s a very easy and fun way to jazz up any old morning.

What You'll Need

Makes 1

Eggs - 2

Croissant - 1

Bacon - 2-3 pieces

Feta - 2 Tablespoons

Red Onion - sliced thin

Avocado - half

Tomato - 1 big slice

Pickled Jalapeño - 3-5 rings

What You'll Do

  1. Preheat oven to 400.

  2. Cook bacon until crispy. Remove from pan and set aside.

  3. Slice croissant in half and set on baking sheet. Bake 5 min or until toasty.

  4. Meanwhile, make soft scrambled eggs and set aside while you prep remaining ingredients.

  5. Remove croissant from oven and spread avocado on bottom half.

  6. Place onion, tomato, bacon, eggs, jalapeño, and feta on top and enjoy!
