Chicken Caesar Sammies

I really wanted something easy this week. Not just for me but also for you. My mind is all over the map lately (both literally and figuratively) and I figure I’m not the only one. So let’s go easy on ourselves and make something comforting but also out-of-the-box.

To start with I don’t think I’ve ever met a Caesar salad I didn’t like. There’s just something about the creamy, tangy dressing and the crunchy romaine, and then it’s made a little special here with the toasted Ciabatta and lemony chicken. This meal will come together in less than 15 minutes and I think you will find it to be a total crowd pleaser.

What You'll Need

Serves 4

Boneless skinless Chicken Breasts - 1 pound

Caesar Salad Kit (or romaine and Caesar dressing)

Ciabatta bread - 8 slices

Parmesan

Extra virgin olive oil - 1 Tablespoon

Lemon Pepper seasoning - 2 teaspoons

Dried Oregano - 2 teaspoons

What You'll Do

  1. Slice chicken breasts into 1” wide strips. Season both sides with lemon pepper and oregano.

  2. Heat oil in a large skillet over medium high heat.

  3. Cook chicken 3-4 minutes per side.

  4. In a bowl, toss salad together (sans croutons), saving a bit of dressing for your toasted bread.

  5. Toast Ciabatta - if cooking for four, place on a baking sheet and drizzle theslices with a little olive oil and toast at 400 for about 8-10 minutes.

  6. Assemble the sammiches! Shmear a little Caesar dressing on your Ciabatta, then layer with chicken and salad, and sprinkle with Parmesan.
