Chewy Ginger Molasses Cookies

It’s holiday cookie time! Can you believe it? There are so many, it was hard to choose which to share first. But these are an absolute favorite. The dark molasses and the spicy, chewy ginger pieces on the crackly cookie top…the way the cinnamon and cloves smell up the whole house and provide such a cozy warmth. Enjoy them with a cup of strong coffee or a glass of red wine, you cannot go wrong with this cookie during Holiday times!

What You'll Need

Makes 15 cookies using a 1 5/8 oz. cookie scoop (a little over 3 Tablespoons)

Butter - 1.5 sticks, room temp

Sugar - 1 cup

Eggs - 1

Molasses - 1/4 cup

Flour - 2 cups

Baking Soda - 2 teaspoons

Cinnamon - 1 teaspoon

Ground Cloves - 1/2 teaspoon

Ground Ginger - 1/2 teaspoon

Kosher Salt - 1/2 teaspoon

Turbinado Sugar - 1/2 cup

Crystallized Ginger pieces -1/4 cup

What You'll Do

  1. Beat butter and sugar in stand mixer until fluffy.

  2. Add egg and mix until combined, then slowly stream in molasses with mixer on low.

  3. In separate bowl, add all dry ingredients and whisk to combine.

  4. Add dry ingredients to mixer and beat until just combined.

  5. Refrigerate dough for 30 minutes. Meanwhile, combine turbinado and ginger pieces in a small bowl.

  6. Remove dough from fridge and scoop into balls, and dip each one in the sugar mixture.

  7. Bake at 350 for about 20 minutes or until crackly and golden, but still chewy.
