Wrapping this year (eye roll, rage face, junk show) up with something greater than the sum of its’ parts… an incredibly easy and impressive appetizer; the bacon wrapped date.

You need four ingredients: Medjool dates, bacon, goat cheese, and balsamic glaze. And you need about a half hour and an occasion. Insert New Year’s Eve here and your plans to sit on your couch drinking martinis with your loved one while trying to keep your eyelids open until midnight (just me?) just got a whole lot better.

Cheers, folks. We made it another year (barely, which might make for all the more reason to celebrate).

What You'll Need

Bacon

Medjool Dates

Goat Cheese

Balsamic Glaze

What You'll Do

  1. This is hardly a recipe and more of a guideline, so listen up!

  2. Carefully slice open your dates lengthwise, and remove the pit.

  3. Stuff each date with a little goat cheese - we’re talking maybe 1/2 teaspoon, just enough to fill them but not have them overflowing. Close them up as best as you can.

  4. Cut bacon in thirds or fourths, depending on how big your dates are, and wrap each date in bacon until the ends meet. Secure with a toothpick.

  5. Place on wire rack on foil or parchment lined baking sheet and bake in 400 degree oven for 30 min.

  6. Drizzle with balsamic glaze and enjoy!
